A Day in the Life: Thursday
I just could not get up today. I stayed up later than usual last night, finishing up The Price of Tides. It was such a good book. My head was swimming and I couldn’t fall asleep. These days, when I can’t fall asleep, I grab a snack. I find that I sleep much better if I eat a good dose of fat and carbs.
Last night, I had a handful of trail mix and plantain chips. Delicious combo if you ask me. After snacking, I went right to sleep.
I set my alarm for 5:30 a.m., so I could get up and go to the gym. My brain said ‘no’, not happening. So I reset my alarm for 6:30 and went back to bed. I woke up around 6:40, hopped in the shower and got ready for work. I wasn’t hungry, so I threw a scoop of Vital Proteins Collagen in decaf coffee and was on my way.
I’ve noticed when I get a late start and am rushing around (stress), my body is less receptive to food. In the past, I would force myself to eat something because not having breakfast=bad. Not anymore. I keep collagen on hand for times like these. I add it to a warm beverage with some fat; coconut milk and coconut oil and drink up. I then pack something that I can eat later. Today, it was a hearty serving of the butternut breakfast back from the The Autoimmune Wellness Handbook. I love this stuff. It's a perfect breakfast for when you aren't feeling eggs.
I ate the breakfast bake around 9:30 a.m.
Around 12:30 p.m., I was ready for lunch. I kept it simple; turkey/salami sandwich with avocado and honey mustard on GF bread. I pair it with plantain chips and a few squares of Endanger Species 88% dark chocolate.
During lunch, I got a phone call from Lens Crafters. I ordered a new pair of glasses on Friday. It was already time to pick them up! So excited. I spent two hours in their store on Friday, during the snow storm picking out the perfect pair.
After lunch, I had a couple of meetings I left around 4 p.m. to pick up my glasses. So in love.
Got my specs and headed home to change for a quick workout. It's resolution time, so the gym was PACKED. I kept my workout simple so I could get out of there; chin ups, 15 minutes on the stair steppers and a super set of deadlifts and jacks.
I was pretty hungry when I got home. I heated up some rotisserie chicken, butternut squash and threw together a simple salad.
After dinner, I took a shower and jumped into bed to start reading Wrecked. I ordered it on Amazon after Laura Schoenfeld posted about it on her Instagram account. It's all about stress and its impact on our health. I'm working on a post now to summarize the book and give you some actionable steps for achieving your 'health' goals.
I read for about an hour before I started to feel a bit hungry. I snacked on an apple and almond butter before finally heading to bed.
