What I Ate Wednesday

Happy Hump Day, ya’ll! Crazy to think we are more than halfway through the week, time is just flying by! Last night I had dinner with my boyfriend, Andrew. We ate pretty late so when I woke up this morning, I wasn’t hungry.

Instead of forcing myself to sit down and eat something, I opted for two scoops of Vital Proteins Collagen Peptides mixed in half-caf coffee. I drank this as I was getting ready.

By the time I got to work and settled in, around 8 a.m., I was ready for something more substantial. Luckily I threw a Plain Kite Hill yogurt, Nut and Seed Larabar and Strawberries in purse to snack on.

As I was writing this down on my food log (I plan to talk more about this in an upcoming post), I realized this was the same breakfast I had last Wednesday. I am such a creature of habit. If I like it and know it works, then I go for it. Quick and easy. That’s my motto. 

When I was packing my lunch last night, I realized salad was off the table. Since I mostly have salad stuff, I had to get creative with lunch. I threw a pack of Applegate Oven Roasted Turkey, Boar’s Head Pepperoni, a small slice of leftover avocado and some mixed greens in my lunch bag..  I added an apple and handful of Jackson’s Honest Sweet Potato Chips to round it out. Again, simple.

My co-workers were laughing as I pulled out a full packed of meat and bags filled with chips, salad mix and fruit. I slapped a piece of pepperoni and sliver of avocado on top of a couple of pieces of turkey and squirted some mustard inside before chowing down. Delish. 

Around 1:30 p.m., I realized I was still hungry and had an Epic Bar in my purse. So, I ate that.

As I mentioned last week, I run on Wednesdays. After work, I changed, cleaned up a bit and snacked on a Siete Foods tortilla filled with almond butter and banana. I added some pumpkin pie spice and sea salt, to die for.

After group, I came home and whipped up a quick meal. I roasted sweet potatoes and broccoli on Sunday, so I threw a threw a handful of each in a bowl along with a chicken apple sausage. I usually add avocado, but the one I have on hand isn't quite ripe. Instead, I mixed Tessamae's creamy ranch and Sriracha in a small bowl and put that ish on everything.

After dinner, I wanted something fun so I topped some strawberries with sunflower butter. YAS.
