What I Ate Wednesday
I could not get myself out of bed this morning. I probably hit snooze three or four times! When I finally got up, I had a rockin' headache and my stomach was feeling off. Because I wasn't feeling well, breakfast was off the table. Instead of sitting down for my usual meal, I added two scoops of Vital Protein's Collagen Peptides to a little bit of leftover half-caf coffee and brought a KiteHill Plain yogurt and Nut and Seed Larabar with me to work.
When I got to work, I still wasn’t feeling well. I ate my yogurt and bar and took a few Ibuprofen. Taking over the counter pain reliever is not the norm for me but in order to get through the day, it felt necessary.
I had a bunch of meetings in the morning, so I stopped at Starbucks for a tall half-caf and some water to get through the day.
As I've mentioned before, salads are my go-to for lunch. I put them together the night before, to make mornings easier. I just grab my lunchbox and go. It's days like today that I grateful for this habit. I was rushing around this morning to get out the door on time. If my lunch wasn't prepared I would have ended up eating fast food. This one has organic 50/50 mix, avocado, roasted pumpkin seeds, dried figs, a piece of bacon and rotisserie chicken. I dressed with a mix of Tessamae's Balsamic Vinaigrette.
After lunch I was craving some dark chocolate and I had a few more meetings, so I grabbed a dark chocolate snack mix from our cafeteria. It was pretty basic, dark chocolate, pecans, almonds and cashews. I had a small handful, which was really satisfying.
After work, I headed to Fresh Thyme to pick up ingredients to make tacos. On my way home, I had a Chicken Srircha Epic bar. I was getting a little hungry and had a six mile run, so I had a bar. I know, eating in the car is not ideal for digestion but that’s life sometimes.
I got home and chopped up a red and green bell pepper and red onion. I sautéed them in a pan while I whipped up some homemade guacamole. I threw it all in the fridge and headed out to meet my running group. We ran six miles with fartlek’s. The run was pretty rough. It’s summer again in Cincinnati, 88 degrees and super humid. I felt like an elephant but I kept at it. Tacos were what got me through.
