Weekend Update!

I didn't post last weekend because I was on vacation in Folly Beach, SC, with my boyfriend and his family. We spent the days soaking up the sun and enjoying each other's company. It was exactly what I needed. If I'm being honest, the last few months have been really stressful with work, finishing up my program and starting a business.  I needed time off to rest and relax. 

We got back Tuesday evening and ran head first into the week. So, I spent much of this weekend catching up on my to-do list.

When I left work on Friday, I decided I NEEDED sushi. Like my life depended on it, I rushed to my car and headed to Whole Foods. I grabbed my go-to rolls; shrimp California and avocado.

My mouth was watering as I drove home. I literally threw down my stuff, opened the fridge, mixed some coconut aminos and red boat fish sauce in a small bowl with some wasabi and went to town. I was in heaven. I took my time and enjoyed every bite. It was worth every penny.

After dinner, I did laundry, roasted some sweet potatoes, finished a post and cleaned up a bit. I called it a night pretty early, falling asleep to Grey's Anatomy. 

Saturday, I got up to my alarm, confused as can be. I woke up thinking I was late to work, with a short week my brain was in Friday mode. I shook off the panick, made a quick cup of coffee and threw on running clothes. I was scheduled to meet my training group at 6:45 a.m. for a nine mile run. 

The weather was amazing; 68 and cool. It made the run through Norwood a breeze.

After the run, I went home and made a big breakfast; chicken maple sauage, two fried eggs and roasted sweet potatoes. It was just what I needed to get myself ready to sit down and work on some client stuff. I have a nutrition consultation on Monday and planned to spent Saturday afternoon preparing. I hunkered down and did some work. After a couple of hours, I got restless and headed out to run a few errands. 

I stopped by my local Trader Joe's and TJ Maxx and ended up buying myself a pumpkin spice candle, a new pair of sweats and some face cream. Exciting stuff, I know. 

I got home, finished up some research, then hopped in the shower to get ready for a friend's wedding.

I met my mom at the venue and we headed inside to meet up with our other friends. We had a couple of drinks, a lovely meal and chatted a bit before heading home. I watched another episode of Grey's and crashed.

Sunday, I got up ready to face the day. I slept in a bit and was feeling refreshed. I got to work making some changes on my website and finishing up some research for a client. Around 9 a.m., I decided I wanted to take a walk to the Hyde Park Farmer's Market. I threw on some comfy clothes, grabbed a re-usable bag and headed out.

I brought my headphones with me so that I could queue up a  podcast. I chose 'This American Life', pressed play and walked to the market. I was almost skipping on my way there. The sun was shining, birds wee chirping and I had the whole day to myself. That's my favorite feeling! I love Sundays for that reason. I allow myself to do whatever feels right. 

I took a walk around the market, checking out the different vendors and then headed home. I finished up the podcast as I made breakfast and kombucha. 

My boyfriend called, so I talked to him for a bit and then headed to the grocery store. I picked up my weekly staples and ingredients to make chicken soup. When I got home, I started my meal prep, chopping up veggies, herbs and chicken to add to the Crockpot. I threw it all together and turned it to low. I'll let it simmer until tomorrow morning.

After all the chopping, I worked up a bit of an appetite. I snacked on the fruits of my labor, I made ants on a log with leftover celery, unsweetened sunflower butter and organic raisins, I also had a handful of Jackson's Honest sweet potatoe chips dipped in homemade guac. After making a mess in the kitchen, I cleaned up and got started on this post. 

My goal was to be finished up by 4:30 p.m., so I could make it to yoga, but that didn't happen. You win some, you lose some. Since the weather is lovely and I have been sitting on my butt for awhile, I am going to head outside for a walk. I hope you enjoy the rest of your weekend and have a great week!
