Let's Taco Bout Weekend Recaps!
I want to treat this blog like a conversation with a good friend, sharing my highs and lows. Giving you guys a snapshot into my life, with the hope that you get to know and trust me.
Not long ago, my friend Jennifer introduced me to Robyn's blog , The Real Life RD. She has a bunch of great content, but what I love about Robyn is that she is just so real. When I read her posts I can imgaine sitting across from her on a comfy counch, just chatting. That's what I want for my site. And since imitation is the best form of flattery, I am going to take a page from Robyn's blog and start doing weekend updates. It's the best way I can think to share a little bit about me without boring you to death!
First, let me start with, I was SO looking forward to this weekend. I was go. go. go. all week. I was out of town the previous Thursday through Monday, so I had a lot of catching up to do. My sights were set on a productive Friday night. I kept dreaming of the opportunity to get back into my groove, cleaning, doing laundry and making food. You know, the finer things in life. I left work a little early on Friday to get a head start.
My first stop was Fresh Thyme. After looking at Diane Sanfillpo's Instagram 'ode to tacos', I had a real craving. So, I picked up a red and green bell pepper, Siete Food Tortillas and kombucha and headed home. I had shredded rotisserie chicken in my fridge plus some leftover guac from earlier in the week. It was on. I chopped up the peppers and some red onion and quickly sautéed them in a pan while my chicken heated up in the oven. While that stuff was going, I fried up the tortillas in a skillet and boom, tacos!
Such a simple and satisfying meal! After dinner I started some laundry and cleaned around my apartment, all while listening to the final chapters of Elizabeth Gilbert's 'Big Magic'. It was the perfect end to a hectic week.
Saturday morning I got up around 5:45 a.m. to get myself ready for a 17 mile run with Fleet Feet. We ran from their Blue Ash location, so I had to get a move on. I ate a quick pre-run meal and hurried out the door. Since it was so early, the natural lighting was not on point, so no photo but I was pretty proud of my concoction. I fried up a couple of tortillas and topped them with leftover almond and coconut butter and some strawberry jam. I also had a few ounces of coffee with Vital Proteins collagen peptides. It was just enough to get me going.
We ran around Blue Ash and worked up quite an appetite. So, after the run I made plans to meet my bestie across the street for breakfast. Saturday was her 30th birthday, so it was only fitting that we meet for her favorite meal at one of her favorite restaurants, Sleepy Bee.
We sipped on coffee as we caught up. It has been a few weeks, so we had a lot to talk about. Breakfast came and we were more than pleased. I got their Worker Bee with an extra egg, gluten free toast and bacon. It sure did hit the spot.
After breakfast we got to talking about personality tests. I took a test on 16personalities.com Friday night. Sarah was curious, so she took it too. We had so much fun going back and forth on different traits! It's amazing how a personality test can be so spot on. The test is free! I encourage you to take it, too.
After all of that, I came home, cleaned up my apartment and went to TJ Maxx to pick up a new notebook. After listening to 'Big Magic', I was inspired write something creative everyday. Since I have a normal 8-to-5, I find it challenging to keep up with blog stuff during the week. I thought this would be a good way for me to stay on task. Plus, I love school supplies, so that's an added bonus. I found a pretty cute one for a couple of dollars. Once I got home, I sat down to write. It felt so good to have concentrated time to be creative.
Then I watched a bit of Grey's Anatomy and got ready to go out. My friend Hannah and I met up with my cousin’s at Rhinegeist, a local brewery. It had been awhile since Hannah and I caught up, so it was great to grab a drink and gab for a little while. We then met up with my cousins for another drink and headed home. It was nice to see everyone, but I was pretty pooped.
Since I got home and to bed late Saturday night, it was tough getting up Sunday morning. I headed to the gym for a quick upper body workout and stopped by the grocery store to pick up a few things for breakfast. My boyfriend came over around 10:15 a.m. and we shared a nice meal together. I cooked up some Trader Joe's maple chicken sausages, bacon, sweet potatoes, eggs and had some avocado and berries on the side. I don't have a picture because I wanted to spend some quality time with him. It had been awhile since we hung out together and I wanted to give him my attention. After breakfast we sat down for a few minutes before I had to head out.
I met my friends for kayaking/canoeing for my best friend's birthday. Since my boyfriend couldn't make it, I rented a kayak. It was such a beautiful day and so fun to be on the river with friends. We had a great time! It just went so fast!
By the time I got home, I was pretty hungry. I whipped up a couple of tacos. ate a bunch of watermelon and a fancy dessert.
I love this combo; the tart is so good paired with fresh summer fruit.
The rest of my Sunday has been spent writing this post and dealing with computer problems. I plan to take a walk to enjoy the sunshine and spend a bit more time writing.
